Alpine Bread

Alpine Bread.
Time. 20min prep; 1.15hrs baking. Serves. 8-10 people. Why. “It’s gluten-free, packed with proteins and flavour, and is delicious toasted. I eat it savoury, or piled with ricotta and apricot jam… a family favourite.”
1 cup almond flour
2/3 cup sesame seeds
2 tbsp flax seeds, cracked in mortar and pestle
1/2 cup hazelnuts
1/2 cup pistachios
1/2 cup pumpkin seeds
11/2 tsp Celtic sea salt*
6 eggs from pasture-raised, loved-up chickens
1/3 cup water
Preheat oven to 180 degrees celsius. Combine all dry ingredients in a large mixing bowl. Combine eggs and water in a small bowl. Pour wet ingredients into the dry and stir to combine. Line a loaf tin with baking paper, then pour in mixture. Bake in preheated oven for 1.15hrs. Cover the top for first hour with baking paper, then remove for final 15min to crisp up. Turn out on a cake rack and serve warm, cool or toasted.
Geraldton Wax Oil.
Time. 30min gathering and preparing; 10min to make; sit for 2 weeks in a dark place. Pantry. 2 weeks. Why. “Geraldton Wax is so abundant at this time of year, so it’s wonderful to be able to take this beautiful flower and serve it up not only in our vases, but also on our plates.”

Pick the biggest, healthiest flowers, wash, pat dry and set aside. Over a jar, take each flower, squeeze the sac under the petals and drop into the jar. In the meantime, heat oil to 31 degrees celsius and pour over flowers until oil covers them. Put on lid and bump jar a few times to remove air bubbles trapped around the flowers. Flowers must be under the oil, otherwise it will go mouldy. Store in a dark place for two weeks, checking it every two days to burb it (remove lid, then replace and store again). Serve in a small bowl with bread.
Floral Butter.
Time. 10min gathering; 10min preparation. Serves. Adjust to how many people you are serving. Why. “I love this floral butter. It’s fast to make and elevates the table, morphing a table staple into a memorable moment.”
Spread butter over a flat or undulating surface. I use my son or my sister’s ceramic platters, but you can use a plate, wooden board - anything! Once spread out and looking smooth, decorate with flowers and place on the table for diners' to help themselves. You’ll want to serve it up for your toast every morning – a beautiful start to the day!
