Marni Downer has been a leader in gut health for many years. These days, however, she’s moving into menopause. But whichever age you are, all the experts (Marni included) say that the first step to health is getting the basics down.

Jane is one of those amazing people who can flavour-science it up with ease to create botanical mixes that excite and challenge the palate. She’s worked in some of the best places around Perth and Fremantle, from Il Lido back in the day, to Bread In Common, Harvest, Balthazar and so much more. She’s even rumoured to have worked on the concept of Coogee Common. Her thing is exceptional produce, foraging, planting out her own and twisting and juicing and extracting oils with super-cool electronics to create drinks that taste just as good on their own as with a non-alcoholic or alcoholic spirits. Of course, she also knows her wines, beers and whatever else is behind a bar. Plus, she’s incredibly well connected with the small-batch producers and those looking into biodynamics and organics. So, we are pretty excited she’s joined us as our Flavour Alchemist. We look forward to what she will bring to us, and know that whatever it is, the goodness won’t just be in our glasses.

I guess I could jump in an ice bath.
But that’s just not for me. I’m about eating, drinking, sleeping and meditating to keep mind and body on track.

Recipe.

Easy Broadbeans.

Ten years as a tour guide through Egypt, Turkey, Jordan, Israel and Syriah created a love affair with broadbeans that naturopath Marnie looks to for wellbeing and anti-ageing.

The beauty of this dish is that you can adapt it to what you have in the fridge. When I swap out the parsley, my favourite combinations are: cucumber; fresh fennel for crunch with a little preserved lemon; or just plain old mint.

"I first fell in love with broadbeans on my first visit to Egypt where ful is the preferred breakfast. My broadbean dish is super fresh and totally adaptable to your taste and what's in your garden. It’s also so easy to make. If you keep it simple, it’s not hard to eat healthy – and this is one of those throw-together-dishes that takes five minutes max."

2 cups fresh broad beans
(frozen broadbeans are fine, too, if out of season)
½ cup chopped parsley
4 spring onions, finely chopped
2 tbsp fresh coriander, chopped
2 cloves garlic, crushed
4 tbsp, extra virgin olive oil
Salt (Olsson’s sea salt flakes), to taste
Pepper [black], to taste

I always prefer to use fresh broadbeans as I’m all about eating with the seasons and picking from the garden (or farmer’s markets on a weekend morning). To cook, remove from pods and place in a saucepan. Cover with water, then bring to the boil and cook over a medium heat for 5-10 minutes. Drain, allow to cool. Some people like to peel the outer skin from the bean at this stage, however I’m not one of those people. Leave it on as this adds more fibre to the dish. To create the salad, heap on the herbs, pour over the oil, season to taste and add a good squeeze of lemon. I love lemon, so I drench it – don’t be afraid to do the same.
